Strawberry Seamoss Jam

FUN FACTS:

  • Strawberries are the first fruit to ripen each spring!

  • Despite their name strawberries aren't technically berries

  • Strawberries are technically considered members of the rose family. So this spring, stop and smell the strawberries!

Directions

  • Prepare the berries Wash and cut the strawberries into large pieces. Be sure to remove heads.

  • Prepare the berries some more! Place the strawberries in a small saucepan. Using a potato masher or fork begin to mash the fruits into a chunky texture.

  • Combine berries, sweetener, lemon and seamoss Add agavé and lemon. Bring the mixture to a boil, stirring frequently for about 15 - 20 minutes. When the fruit begins to look jammy, lower the heat and add seamoss Be sure to keep an eye on the mixture!

  • Add to the jar Turn off the heat and carefully transfer the jam into a clean (10-ounce) glass jars. Cool to room temperature. Seal, label with the fruit and the date, and store it in the refrigerator for up to 3 weeks.


RECIPE NOTES:

Adding seamoss gives the jam a lovely texture as well as adds even more nutrients to this sweet treat. Since seamoss is a thickener it also lessens the boiling time.
