Vegan Nutty Banana Bread - Moist and Delicious!


This vegan banana bread is an absolute crowd favourite. Perfectly moist and packed with flavour. It is easily modified for those with allergies and personal preferences

Ingredients


    • 3 very ripe medium - large bananas

    • 1/2 cup unsalted butter

    • 3/4 cup granulated or coconut sugar

    • 1/4 cup sea moss gel

    • 1/2 tsp vanilla extract

    • 1 1/2 cups all purpose flour

    • 1/2 tsp salt

    • 1/2 cup raisins

    • 1 cup walnuts


Note: A 9- x 5-inch bread loaf pan is needed



Instructions

  1. Preheat the oven to 350°F. Grease and flour the bread loaf pan.

  2. In a small mixing bowl, mash the bananas with a fork until it gets to a chunky applesauce texture. Then add the vanilla extract and sea moss gel and mix well.

  3. In a large mixing bowl, cream together butter and sugar. Then, add flour, baking soda, salt and banana mixture and mix well.

  4. Mix in chopped walnuts and raisins. Pour into prepared loaf pan. Bake for 55 - 60 minutes or until an inserted toothpick comes out clean.

  5. Let cool before transferring out the loaf pan then enjoy!
